Description

Often the terms allergy, sensitivity and intolerance are used interchangeably, but they really describe three different food related conditions. Diagnosis is complicated, test results are difficult to interpret, current tests are not always accurate, some tests are controversial and treatment is challenging. It is important that Registered Nurses are familiar with the different types of food reactions, standardized tests and dietary management to be better prepared to assist their patients with food reactions.

Objectives

At the end of this e-learning, the learner will be able to:
Objective 1:
Enhance participant’s awareness of the incidence of food reactions.
Objective 2:
Describe the difference between a food allergy, sensitivity and intolerance.
Objective 3:
Participants will list the common food allergens and reaction symptoms.
Objective 4:
Increase participant’s knowledge of standardized and non-standardized tests currently available to identify food reactions.
Objective 5:
Explain the role of food additives, pesticides and toxic agents in contributing to food allergy reactions.

Ms Elizabeth Strickland MS, RD, LD

Elizabeth Strickland is a Registered Dietitian with over thirty years of experience specializing in Nutrition Therapy for infants, children and adults with developmental disabilities and chronic illnesses. Elizabeth’s area of expertise includes Autism Spectrum Disorders.

Elizabeth is the owner of ASD Nutrition Seminars & Consulting, a clinical nutrition consulting firm that serves families, professionals, educational systems, and private and government programs. In addition to presenting seminars and workshops Elizabeth provides nutrition therapy to individuals diagnosed with autism, ADHD, food allergies, gastrointestinal problems and related disorders.

Elizabeth is a published author; the title of her book is “Eating for Autism … The 10-Step Nutrition Plan to Help Treat Your Child’s Autism, Asperger’s, or ADHD”.

Elizabeth earned a Bachelor of Science degree in Dietetics from Louisiana State University and a Master of Science degree in Foods and Nutrition from the University of Georgia.
